Cojo’s Slow Cooker Chili
Ingredients:
1 1/2 lbs lean ground beef
2 cups chopped yellow onion
1 (15 oz.) can of light red kidney beans (drained)
1 (15 oz.) can of dark red kidney beans (drained)
2 (14 1/2 oz.) cans of dice tomatoes w/ chiles
2 (1 1/4) packets of chili seasoning mix
1 (8 oz.) can of tomato sauce
1 cup of water
Directions:
In a skillet over medium-high heat, brown ground beef w/ the onions. Be sure to break up clumps as much as possible. Once browned, drain the fat from the meat.
Add onion and beef mixture in a slow cooker. Add chili seasoning and mix well. Add remaining ingredients and stir together.
Cover and cook on high setting for 4 hours or on low for 7-8 hrs.
Shrimp Scampi
Ingredients
2 Tbs unsalted butter
3 Tbs olive oil
6 garlic cloves minced
½ cup dry white wine (I prefer Pinot Grigio) *see substitution note below
¾ tsp kosher salt, or to taste
1/8 tsp crushed red pepper flakes
1 ½ lbs large shrimp shelled and deveined (fully thaw if purchased frozen)
1/3 c chopped fresh parsley
Juice of one lemon
Freshly ground pepper to taste
*You may substitute seafood broth for white wine.
Directions
In a large skillet, melt butter with olive oil over medium heat.
Add garlic and saute until fragrant, about 1-2 minutes.
Add wine, salt, red pepper flakes, and plenty of black pepper. Bring to a simmer. Let the wine reduce by half, about 2-3 minutes.
Add shrimp and saute until they just turn pink, 2-4 minutes, depending upon their size.
Stir in the parsley and lemon juice. Serve immediately with rice, pasta, or toasted baguette.
Root Beer Glazed Wings
Ingredients
Chicken wings:
12 whole chicken wings or 1 lb of drums and flats
2 Tbs olive oil
2 Tbs Kosher salt
Ground black pepper (to taste)
2 Tbs granulated onion
2 Tbs granulated garlic
1 Tbs smoked paprika
Root Beer Glaze:
1 c root beer (I used Sprecher’s)
1/2 c packed light brown sugar
1/4 c ketchup
2 Tbs Dijon ground mustard
Directions
Wings directions:
Heat oven to 400°.
In a large bowl, combine wings and olive oil. Massage oil throughout the chicken for even coating.
Add salt, pepper, granulated onion and garlic, and paprika to the bowl. Massage chicken once again, making sure all of the seasoning is evenly distributed on the wings.
Arrange chicken on the rack of a broiler pan and place it in a heated oven. Cook time is 60 mins. While the chicken is cooking, work on the glaze.
Glaze directions:
In a small saucepan, combine and whisk all ingredients.
Place on medium-high heat and allow the glaze to come to a boil.
Once at a boil, reduce heat to medium-low and allow to continue cooking (uncovered, stirring occasionally) until sauce reduces by half and slightly thickens. Cook time approximately 15 mins.
Pro tip! If the glaze is too sweet, you can cut it with a bit of lemon juice. The acid will temper down the sweetness.
Glazing the wings:
After the wings have cooked for 45 minutes, brush the desired amount of glaze onto the chicken and return to the oven.
Note: I glazed my wings twice during the cooking time- you may decide to glaze once or twice, depending on your preference. If you wish to glaze a second time, brush more on at the 55-minute mark and cook the chicken 5 minutes more.
Plate wings on a platter and garnish with fresh chopped green onion. Enjoy!
